Earlier this year we made the decision to eat less meat. This was an organic choice for us because Reed is a born vegetarian, he simply doesn’t like it. So we have been enjoying trying new things in the kitchen to greatly reduce our meat consumption. This Roast Broccoli and Almond Pasta dish is one of my favourites.
6 cups fresh broccoli 2 tbsp garlic (minced) 1/2 cup slivered almonds (or chopped walnuts, also delicious!) 1/2 tsp sea salt 1/4 tsp pepper 4 cups pasta 1/2 cup reduced sodium chicken broth 2 tbsp butter 1/4 cup of parmesan cheese 2 tbsp olive oil
Heat the oven to 400 degrees F. Bring a large pot of water to a boil.
Combine broccoli, garlic, almonds, salt and pepper in medium bowl. Drizzle with olive oil and stir until coated. Place mixture on a large baking sheet and roast for 15 minutes stirring twice.
Cook pasta, drain and return to pot.
Add broccoli mixture to pasta pot and stir in broth, butter and parmesan cheese.
Serve and enjoy!
